Apple Up the Ass Smoked Chicken

Did the smoker mod…..



Reversed the smoker legs for easy access to the charcoal tray

Added the commercial grade thermometer



Brined the chicken last night:



In a solution of:

1 gallon water

1 cup kosher salt

1 cup sugar



Did the rub this morning:



1/2 cup firmly packed brown sugar

2 tablespoons kosher salt

2 tablespoons smoked paprika

2 teaspoons dried crushed red pepper

2 teaspoons onion powder

2 teaspoons dry mustard

1 teaspoon coarsely ground pepper

Puttin’ the bird in right now!



I was going to follow Rachel Ray’s beer can recipe:

1. Remove the chicken from the brine and rinse well inside and out with cold water.*

2. Open the beer can and discard or reserve half of the liquid.*

3. Insert the top of the can into the chicken's cavity and smoke the chicken*



But I thought I’d rather drink the beer and stick apples up it’s ass ;- )
